Welcome back to our weekly Savvy Saving Sunday cooking series!
With most days of the week turned upside down, we thought there was no better time to make breakfast for dinner! This week, we decided to keep it healthy, opting for cheesy eggs and spinach rather than our go-to pancakes.
The fun thing about budget meals is that they don’t need to be overly complicated. You don’t have to make a gourmet dinner every night – especially in the middle of a pandemic. Sometimes, it’s just about changing things up and having delicious meals you wouldn’t normally have for dinner!
Of course, this recipe can be adapted to use whatever vegetables you have in the refrigerator and feel free to mix up the bread. This is your meal!
Here’s what we used:
- 4 Eggs
- Dash of milk
- 1/2 Cup mozzarella cheese
- 2 Bunches of spinach
- 2 Slices of sourdough bread (any bread will do!)
- 3 Garlic cloves
- 3 Tablespoons butter
- Oil for the pan
First, toast two pieces of bread and set to the side.
We decided to leave the eggs for last as there is nothing worse than cold eggs. So next, we started on the garlic spinach.
Heat up the pan to medium-high heat and sauté the chopped garlic in oil. After 2-3 minutes, add spinach and cook until slightly wilted. Take off the pan to cool.
Last but not least, the cheesy eggs. Scramble 4 eggs in a medium bowl with a dash of milk. Add 1/2 cup of your favorite cheese. Heat the butter over low heat until hot.
Cook eggs on low heat until done – the lower and slower you cook eggs the less rubbery they will be!
Finally, add all the ingredients together and Voila! Breakfast for dinner!
Pssst… we added bacon bits here but of course, this is optional!
