Savvy Saving Sunday: Ham, Spinach & Cheese Strudels

Welcome back to our weekly Savvy Saving Sunday cooking series.

The Diamond NestEgg founding team – and Jennifer’s family – have very strong Austrian roots, so strudel is a simple and easy weekend favorite. 

This is our salty version, one for vegetarians and one for meat-lovers. Stay tuned in the coming weeks – we have sweet treats & desserts coming soon!

 

Today’s dish comes out to $ 13.18 for the meat version (even less for vegetarian!) and feeds a family of four.

Spinach (1 bunch) $ 2.17
Ham (6 slices, thin-cut) $ 2.72
Mozzarella Cheese (8 oz, shredded) $ 2.17
Flour (1/4 cup) $ 0.33
Butter (4 tablespoons) $ 0.49
Total Cost w/ Tax (may vary depending on your location) $ 13.18

Total Time: 40 minutes

Prep Time: 20 minutes

Bake Time: 20 minutes

Serves: 4

 

Preparation

Preheat oven to 400°. 

Lay out the ingredients for easy assembly.

 

For Spinach & Cheese Strudel: Place 1 pastry sheet on a baking sheet lined with parchment paper. Brush with melted butter. Spoon 3/4 of the spinach onto the middle horizontal/ long side of the pastry sheet leaving about 1.5 inch from the vertical/ short side. Top with 1/2 of the cheese. Fold side and edges over filling, roll up and pinch edges as desired, adding a tiny bit of water as needed when you pinch. Brush with butter. 

 

For Ham, Spinach & Cheese Strudel: Place 1 pastry sheet on a baking sheet lined with parchment paper. Brush with melted butter. Spoon remaining spinach onto the middle horizontal/ long side of the pastry sheet leaving about 1.5 inch from the vertical/ short side. Top with ham and remaining cheese. Fold side and edges over filling, roll up and pinch edges as desired, adding a tiny bit of water as needed when you pinch. Brush with butter. 

 

Bake 20 minutes or until golden brown. Serve immediately with a side of Caesar or green salad.

Note: You can change it up – try different filling variations, such as turkey and swiss cheese or artichoke, spinach and parmesan cheese!
